Château Barouillet has been in the same family for eight generations, but our research has unearthed no further information because its lands have passed down through female lines with no accurate recording of names due to practices at the time. One thing is certain: it has been there for a very long time and my ancestors loved this land and cherished it.

We're at Pomport en Dordogne (24) in a beautiful area called Monbazillac among the highest plateaus in the region (175m). South of Bergerac, just 50 km east of Saint-Émilion. The 45-hectare estate is in 5 sections.

Some 20 hectares in Monbazillac with an average density of 5,000 feet of plantation per hectare and an average vine age of 50 years yielding an average of 26 heclolitres/hectare. The vine types are mainly Sémillon and Muscadelle as well as Sauvignon Blanc and Gris, Chenin, Ondenc and Ugni Blanc.

Some 9 hectares of Bergerac red in the communes of Mescoules and Pomport enjoy good (east-west) exposure on relatively thin limestony clay soil. The average density of the vineyard is 4,000 feet/hectare yielding an average 50 hectolitres per hectare. The average age of the vines is 30 years. The vine types are Cabernet Sauvignon, Merlot and Cabernet Franc for the most classic, as well as Malbec and more rarely Mérille (also known as Périgord). Some of these red grapes may also be used to enhance Bergerac Rosé, depending on the vintage.

We also have a second winery, in the middle of the vineyards, so we can process everything fast. With full southern exposure on a gentle slope, the vineyards are a real mosaic ranging from stony clay clumps to flint and sandy clay, all under a white clay base and "tran" (ferruginous clay characteristic of Pécharmant soil). The planting density is 5,500 feet/hectare with an average vine age of 25 years and yield of 40 hectolitres/hectare. The vine types are Merlot, Cabernet Sauvignon, Cabernet Franc and recently Malbec.

On 1 hectare of wet-loving Côtes de Bergerac vines in the commune of Mescoules, but situated on a dry and arid limestone plateau, the 40-year-old vines (average age) naturally have low yields and a high sugar and acid content. The average density of the vineyard is 4,000 feet/hectare yielding an average 50 hectolitres per hectare. The vine mix is almost the same as Monbazillac, with Sémillon and Muscadelle often enhanced with a bit of Chenin or Sauvignon.

Then 9 hectares split between Pomport and Mesoules but still on limestony land selected for dry whites. The density of the vineyard is 5,000 feet/hectare with an average vine age of 54 years. The average yield is 50 hectolitres/hectare. The vine types are Sauvignon Blanc and Gris, Sémillon, Chenin, Chardonnay ORGANIC AGRICULTURE
Beehives among our vines We take an artisanal approach to agriculture, taking care of every parcel of land as it should be. To do so, since 2010, we have little by little converted the entire estate to organic farming to have it all certified organic or in conversion by 2014. We are pushing the organic approach even further by working to a lunar calendar. We are also striving to reduce our impact on soil and environment as much as possible by using plant-based infusions in our additives. We adjust our cultivation methods (weeding, tilling, clipping) to suit the year's soil conditions and climatic conditions, to ensure that we can deliver the best possible vintage each year.

THE MAGIC OF VINIFICATION
Vinification covers the entire process from start to finish, respecting the raw material (conveyor, pneumatic press, peristaltic pump). We stringently restrict inputs, allowing only homoeopathic SO2. To ensure that, we insist on strict hygiene in our vinification vats. Not using selected yeasts is a risk, but it also ensures that our wines are typical and representative of our AOC region. The vast majority of our wines are not filtered. We tailor each wine to its land, vine, vintage and intent. Vinification in concrete and stainless steel vats. Vinification in casks The aging process depends on the type of wine. It can be aged in concrete or stainless steel vats, barrels, or even amphorae. We rarely use new casks so as not to mask our wines and to allow all the work done upstream to develop. For us, our goal in aging is more about gentle, natural micro-oxygenation of the wine than about aromatisation.
